Foaming (carry-over) occurs because steam bubbles do not break at
the surface. It causes
steam and condensate to be contaminated with boiler water.
High boiler water conductivity (high concentration of dissolved salts) and contaminants such as oils or surfactants in the feed-water cause foaming. antifoam causes steam bubbles to break at the boiler water surface. If the boiler water level surges up and down in the sight-glass or the condensate has a conductivity higher than 50 micromhos, one should suspect foaming and add antifoam to the boiler to prevent carry-over.
